I was looking for a side dish to go with ribs and other grilled meats.  I decided to take a traditional casserole and grill the vegetables to give the dish an extra layer of flavor.  It turned out really well and I had a number of folks ask for the recipe.  Here you go.

2 ears of corn

4 zucchini, halved lengthwise

4 yellow squash, halved lengthwise

1 yellow onion, halved

3 cloves garlic

Cajun spice to taste

2 Tablespoons Olive oil

2 eggs

2 cups bread crumbs

1 cup white cheddar cheese

½ cup Parmesan cheese

Toss all veggies and corn in oil.  Grill over medium heat to get a slight char on all the veggies.  Remove from heat and let cool.  Chop all veggies into 1/2 inch chunks, dice grilled onion and mince garlic.  Add veggies, onion and garlic to a large Dutch oven, ½ cup breadcrumbs, ½ cup cheddar cheese, ¼ cup Parmesan, eggs and spice to taste.   Mix everything together and top with the remaining breadcrumbs and cheeses.

Place Dutch oven on a bed of coals and top with charcoal, cook for 20 – 30 min.  If cooking indoors, bake in Dutch oven for 20 min at 350.
