– 4 lbs of red potatoes
– 4 TBS powdered shrimp boil
– 1 lb apple smoked bacon, cut into 1” pieces
– 2 small onions, diced
– 4 cloves garlic, diced
– 4 TBS Dijon Mustard
– ¼ cup olive oil
– ¼ cup balsamic vinegar
– Salt / pepper to taste
Fill large stock pot with enough water to cover potatoes by 3”
Add shrimp boil and bring water to a rolling boil
Add whole potatoes to the water and cook till done (about 20 min)
While potatoes are cooking, brown bacon in large Dutch oven.
Remove browned bacon and drain off all but 2 TBS of the grease into a bowl.
When grease has cooled, add olive oil. Start pouring in the balsamic vinegar while whipping with a wisk.
Add onions to Dutch oven and cook till browned, add garlic and cook for 1 min.
Add whole potatoes and start mashing into the onion mixture. Add vinaigrette, bacon, and Dijon mustard and mash.
Add salt and pepper to taste and add more Dijon if needed.
