– 2 cups rice
– 1 cup coconut milk
– 3 cups chicken stock
– 1 small onion diced
– 2 tbs olive oil

Sauté the onion in a pot.
Add rice and cook in onion / oil for 4 min over med heat
Add coconut and stock and bring to a boil. Reduce heat to low and cover pot with lid. Cook for 20 min.
