Gumbo, Tasso, Boudin, Jambalaya, Etouffee, and more can only mean one thing.  It’s LSU week!

That’s right folks, this week we welcome November, cooler weather, time change and LSU to Tuscaloosa.

Most of you know it’s one of my favorite games to cook for and just like years past I’m excited to get those Cajun dishes going.

I’ll start working on the Roux this week, dicing veggies and smoking the Tasso.  As always I’ll be serving some great sausage and other Cajun items from The Best Stop (thanks Morgan!).

This week is a 6pm kick and I’ll be doing some traditional Cajun/creole brunch item around 11AM and then rolling into dinner around 3pm.
