It’s that time of the year. Bama got off to a great start against Louisville for the season opener. That brings us to the opening home game of the year this weekend. We’re welcoming in the Arkansas State Red Wolves.

Arkansas State University is located in Jonesboro, AR and is the largest city in the Arkansas Delta. In looking for unique foods I came across the fact that tamales are a popular dish in this region. Tamales, like many regional staple foods have many variations and flavors. I’ll be turning the traditional dish into a skillet bake in order to feed a larger group.

In addition the the tamales I’m going to do some simple sliders and other items I can throw on the grill. We’ll be using the open pit as much as possible this season. Mrs Jarmon has lined up a Tarpon Springs Greek Salad and some other proteins to go along with everything. I’ll have lucnh off around 12:00 to give folks time to walk around campus and enjoy things before the 2:30 kick.
