After a stretch of some away games we welcome the Tide back to Tuscaloosa.   This week we are hosting the A&M Aggies. We visited College Station last year when A&M hosted the Tide. Their fans were great both before and after the game. Let’s all be great hosts and make sure we welcome the A&M fans to Tuscaloosa.

Texas always brings the thought of beef, BBQ and Tex-Mex. So for this tailgate I thought I would combine them all. With a 2:30 kickoff I don’t have time to smoke brisket low and slow, but I want to work beef into the menu. I also like the idea of BBQ and Tex-Mex, so I am going to combine them all.

Here is what I am thinking:

• Donkey Show – no not that… it’s a cocktail
• Spicy Queso
• Taco Bar with

o   Slow Smoked Beef Tenderloin with Blue Cheese and Arugula

o   Flank Steak with Chipotle-Lime Chimichurri

o   Mojo Chicken Thighs

• Ranch Beans
• Mexican Rice

I plan on getting food off around 12:30 so that folks can hit the quad etc.
