We kick off the 2013 home tailgate season with the Rams of Colorado State University. Colorado is one of the states that have no official food. So, I started doing a little research. I learned that the US Potato Board is in Denver (I would have thought Idaho), Dove Creek, CO is the pinto bean capital of the world and that Lamb is one of their most noteworthy exports.

Since the ram and lamb are somewhat related, I thought a menu featuring lamb would be fitting. Throw in some potatoes and pinto beans to keep in the Colorado spirit and we are in business. I am not 100% on the menu, but so far this is what I was thinking.

— Greek Lamb Sliders
— Roasted Leg of Lamb
— Potatoes Au gratin
— Ranch Style Pinto Beans

I will throw a few beef sliders on the grill as well for those folks that may not want to try the lamb. Though, if you have never had a lamb burger you are missing out for sure.

For those that are not coming down, I have posted a quick and easy cheese dip recipe. Give this a try and let me know what you think.

Hope to see you in Tuscaloosa!
