Roasted Duck With Habanero Orange Sauce

Duck

– 1 whole duck
– 1 Onion, Carrot and Celery Stalk (slices)
– Salt and Pepper

Heat oven to 425
Lay onions, carrot and celery in the bottom of a roasting dish.
Place the duck breast side up on the bed of veggies. Poke holes in skin with a skewer and sprinkle with salt and pepper.
Place pan in oven and roast for 15 min, reduce heat to 350 and roast for another 90 min or until done.
Remove from heat and allow to cool, remove from bone.

Habanero Orange Sauce

– 2 cups fresh Orange Juice
– 1TBS honey
– 1 Habanero Pepper
– salt

Place OJ and pepper in a sauce pan and start reducing the sauce. When reduced and starting to thicken, remove pepper and whisk in honey and salt to taste.

Serve over duck on a bed of pasta or risotto.
