Alabama Tailgate Recipes

Shane Hill attributes his enthusiasm for cooking to his late stay-at-home mother whose excellent cooking spawned his love for food at an early age. But it wasn’t until he attended The University of Alabama, tired of boxed dinners and take-out, that Shane began learning to cook. What began as an economic necessity quickly turned into a serious hobby and passion.

Quick and Easy Flank Steak

This weekend we had some folks over for the Alabama game. I wanted something simple to throw on the grill. As I was breaking out the flank steak I was surprised to hear how many folks thought you had to tenderize, marinate or in general perform some type of voodoo on this cut of meat. […]

Are You Kidding Me Easy Ribs

I have cooked ribs through the years in about every way possible. I have done the boil in vinegar, simmer in the oven, smoke for 6 hours 3min and 73 seconds (wrapping them in foil at 10873 second of course)… oh and at 211.99 degrees (I did not want to boil them…). LET IT GO! […]

Honey Brined Smoked Catfish with Sriracha Spiked Tartar Sauce

A few years ago I smoked catfish for a tailgate.  It turned out great and was a huge hit.  It is easy and perfect if you are having folks over for the game.   You will want to brine this to help keep it juicy.  The spiked tartar sauce adds a nice kick.  Click here for […]

Smokey Mountain Chicken Pasta

Since I am doing a traditional Oktoberfest for this year’s tailgate, I thought I would share a recipe I came up with a few years ago.  I wanted something that was easy to cook at a tailgate, but also was looking for something that brought Tennessee into the menu.  So I came up with the […]

Shredded Brisket Enchiladas with Fire Roasted Salsa Verde

This salsa verde is one of my most requested recipes. By grilling all the ingredients you add another depth of flavor. If you don’t have a grill, you can roast them under a broiler. If you don’t like beef, you can use about any meat you like. I will use rotisserie chicken or even a […]

Shane’s Smoked Shrimp

Shane’s Smoked Shrimp on Grilled French Bread with Goat Cheese and Peach Preserves This is an easy recipe that can be made ahead of time. Cook everything the day before the game and just assemble everything at the tailgate. If you don’t want to try and smoke the shrimp, you can always boil them or […]
